Make tasty cherry rice with Cornish hens for an easy and flavorful meal.
Ingredients:
  • 1 (24-oz.) Cornish game hen
  • 1 (6-oz.) pkg. seasoned long-grain and wild rice mix
  • 1/4 cup dried cherries
  • 3 tablespoons slivered almonds
  • 1 1/2 cups water
  • 1/2 teaspoon garlic-pepper blend
  • 1/4 teaspoon salt
  • 1/4 cup cherry preserves
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat oven to 375°F. Remove and discard the neck and giblets from the game hen, then cut the hen in half using kitchen scissors.
  • In an ungreased 11x7-inch (2-quart) glass baking dish, mix the rice with the seasoning from the package, cherries, almonds, and water until well combined. Place the game hen halves on top, skin side up, and sprinkle with garlic-pepper blend and salt.
  • Mix the preserves and vinegar in a small bowl until well combined. Brush half of the mixture over the game hen halves and then cover with foil.
  • Bake at 375°F with a cover on for 30 minutes.
  • Uncover the baking dish and brush the game hen halves with the remaining preserves mixture. Bake for an additional 25 to 30 minutes until the game hen is fork-tender, juices run clear, and rice is tender.
