"15-minute dinner: Cherry balsamic glazed lamb chops for a fast and delicious meal!"
Ingredients:
  • 12 lamb rib chops (about 2 lb)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 clove garlic, finely chopped
  • 1 teaspoon chopped fresh rosemary leaves
  • 1/3 cup balsamic vinegar
  • 1/3 cup cherry preserves
  • Fresh rosemary sprigs, if desired
Instructions:
  • Preheat broiler. Grease broiler pan rack with cooking spray. Arrange lamb chops on rack in pan and season with 1/4 teaspoon each of salt and pepper.
  • Combine garlic, chopped rosemary, vinegar, preserves, and remaining 1/4 teaspoon each salt and pepper in a small bowl. Set aside half of the preserves mixture for serving. Brush the remaining half of the mixture over the chops.
  • Place the dish under the broiler with the tops 5 inches away from the heat source for 6 to 7 minutes. Turn the dish once and brush with additional preserves mixture. Cook until it reaches your preferred level of doneness. Decorate with rosemary sprigs and serve with the remaining preserves mixture on the side.
