Enhance roast turkey with fruity stuffing and cherry glaze.
Ingredients:
  • 1 whole turkey (12 lb), thawed if frozen
  • 2 tablespoons chopped fresh sage leaves
  • 1/2 teaspoon pepper
  • 1/2 cup butter or margarine
  • 1 large onion, finely chopped (1 cup)
  • 1 package (16 oz) herb-seasoned stuffing mix
  • 2 medium red apples, chopped (2 cups)
  • 1 1/2 cups dried cherries
  • 1 cup chopped pecans
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz container)
  • 1/2 cup cherry preserves or jam
  • 1/4 cup ruby port or chicken broth
Instructions:
  • Preheat oven to 325°F and prepare a 13x9-inch (3-quart) glass baking dish by greasing it with shortening or cooking spray. Remove the neck and giblets from the turkey, then rinse the turkey inside and out with cold water and pat it dry with paper towels. In a small bowl, combine sage, salt, and pepper, then massage the mixture onto the turkey skin.
  • In a skillet, melt butter over medium heat. Cook onion for 4 to 6 minutes until tender. Mix cooked onion with remaining stuffing ingredients in a large bowl until well combined.
  • Place the turkey breast side down and delicately fill the neck cavity with 1 cup of stuffing, being careful not to pack it too tightly as it will expand while roasting. Secure the turkey's neck skin to the back using a skewer.
  • Place the turkey on its breast and elegantly fold the wings so the tips touch. Gently stuff the body cavity with 3 cups of stuffing, being careful not to pack too tightly. The extra stuffing can be placed in a separate baking dish, covered, and refrigerated. Secure the legs under the skin at the tail or with kitchen string to hold everything in place beautifully.
  • Place the turkey, breast side up, on a rack in a shallow roasting pan. Insert an ovenproof meat thermometer into the thickest part of the inside thigh, ensuring the tip does not touch the bone.
  • Loosely cover the turkey with foil or a roaster cover and roast for 3 hours. While the turkey is roasting, combine the glaze ingredients in a small bowl and set aside.
  • Covered turkey should be placed in the oven alongside a foil-covered baking dish with stuffing. Roast for an additional 45 minutes to 1 hour and 30 minutes, regularly brushing the turkey with glaze until the thermometer reads 165°F and the drumsticks move easily when lifted or twisted. The stuffing in the center of the turkey should also read 165°F on a thermometer. Remove the baking dish with stuffing from the oven after 40 to 50 minutes or once thoroughly heated to 165°F.
  • Transfer the juicy turkey to a cozy platter, and delicately cover it with foil to keep its warmth. Allow it to rest for approximately 15 minutes for effortless carving. Remember to cover and store any extra turkey and stuffing separately in the refrigerator.
