Valentine's Day breakfast: Cherry pie-filled sponge cake, great for brunch or any time.
Ingredients:
  • 1 cup margarine
  • 1.5 cups white sugar
  • 1 teaspoon almond extract
  • 1 (21 ounce) can cherry pie filling
  • 2 tablespoons confectioners' sugar for dusting
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you generously grease and flour a 10x15 inch jellyroll pan.
  • Cream the margarine and sugar in a large bowl until light and fluffy. Add eggs one at a time, then mix in almond extract. Gently fold in flour until combined. Spread the batter into the prepared pan and create squares with a knife. Fill each square with equal amounts of pie filling.
  • Bake the dish in a preheated oven for 35 to 40 minutes, until it turns golden brown and a toothpick inserted in the center comes out clean. Let it cool, then lightly sprinkle confectioners' sugar on top.
