Impress the crowd with this delicious cherry-glazed Christmas ham.
Ingredients:
  • 118.80 gm brown sugar
  • 165.00 ml bourbon whisky
  • 187.50 ml pitted fresh or thawed frozen cherries
  • 2.50 gm mixed spice
  • 2 garlic cloves, crushed
  • 8kg cooked leg ham
  • Crusty bread, to serve
  • 36.40 gm extra virgin olive oil
  • 1 red onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1/2 red cabbage, cut into 1cm-thick slices
  • 1 cinnamon stick
  • 0.63 gm mixed spice
  • 495.00 gm red wine
  • 255.00 gm Salt Reduced Chicken Style Liquid Stock
  • 45.00 gm brown sugar
  • 82.50 ml red wine vinegar
  • 4 x 5cm-long strips orange rind
  • 250.00 ml fresh mint leaves
  • 250.00 ml fresh flat-leaf parsley leaves
  • 250.00 ml pitted fresh or thawed frozen cherries, halved
  • 62.50 ml pecans, roughly chopped
  • Orange zest, to serve
Instructions:
  • In a large saucepan over high heat, heat oil. Add onion and garlic, cook for 4 minutes until soft. Add cabbage, cook for 5 minutes until softened. Add cinnamon, mixed spice, wine, stock, sugar, vinegar, and rind. Combine and bring to a simmer. Cover, reduce heat to low, cook for 1 hour until very tender, stirring halfway through. Season with salt and pepper, then set aside.
  • In a large saucepan over medium-high heat, combine sugar, bourbon, cherries, mixed spice, and garlic. Stir constantly for 2 minutes until the sugar dissolves. Bring to a boil, then reduce heat to medium and simmer for 5 minutes until slightly reduced. Season to taste.
  • Preheat the oven to 180C/160C fan-forced. Trim the ham by cutting through the rind 8cm from the shank, then peel it off starting from the opposite end. Wrap the shank in foil, brush the ham with glaze, and bake for 1 hour, basting every 10 minutes until golden and caramelized.
  • Thoroughly drain the cabbage mixture and place it in a serving bowl. Add mint, parsley, cherries, and pecans, then gently toss everything together. Sprinkle with orange zest and serve the ham with the braised cabbage salad and crusty bread.
