Ham with Bourbon-Cherry Glaze

Impress guests with savory bourbon-cherry glazed ham for a delicious meal.
Ingredients:
  • 1 fully cooked bone-in ham shank (12 lb)
  • 1 tablespoon black peppercorns, coarsely crushed
  • 30 whole cloves
  • 1 can (12 oz) cola carbonated beverage
  • 1/4 cup bourbon
  • 6 tablespoons packed brown sugar
  • 1 jar (13 oz) cherry preserves
Instructions:
  • Preheat oven to 350°F and lightly grease a 13x9-inch pan. Peel skin off ham, leave 1/4-inch fat, score fat in diamond pattern, season with peppercorns, and place cloves in the centers of the diamonds.
  • Place the ham in a pan and insert an ovenproof meat thermometer into the thickest part of the ham, ensuring it doesn't touch the fat or bone. In a small bowl, combine 1 1/4 cups of cola, 2 tablespoons of bourbon, and 1/4 cup of brown sugar. Pour this mixture over the ham. Bake uncovered for 2 hours, basting with the pan drippings every 15 minutes.
  • In a 1-quart saucepan, combine the remaining 1/4 cup cola, 2 tablespoons bourbon, and 2 tablespoons brown sugar. Mix in 2/3 cup of the preserves, then heat over medium heat for 3 minutes until the glaze is hot and the sugar is dissolved. Brush the glaze over the ham and continue baking for 1 hour and 45 minutes, or until the thermometer reads 140°F. Transfer the ham to a serving platter, cover with foil, and allow it to rest for 30 minutes before carving.
  • Remove fat from drippings in pan. Whisk in 1/2 cup preserves until combined. Pour mixture into a saucepan, bring to a boil, then simmer for 8 to 10 minutes until thickened. Serve glaze with ham.
