Elevate your ham with a rich bourbon, sweet pineapple, and smoky chipotle glaze.
Ingredients:
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 2 cups firmly packed brown sugar
  • 1 (20 ounce) can crushed pineapple in juice, undrained
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 2 fluid ounces bourbon whiskey
  • 1 (10 pound) smoked ham
  • 0.25 cup cornstarch
  • 0.25 cup cold water
Instructions:
  • Add chipotle peppers, brown sugar, pineapple, nutmeg, ginger, and bourbon whiskey to a blender and puree until smooth.
  • Score the smoked ham with diagonal cuts about 1 inch apart and 1/2 inch deep in a diamond pattern. Place the ham in a large bowl and pour the chipotle marinade over it. Refrigerate the ham in the marinade for 3 to 6 hours, ensuring all sides are flavored by turning it occasionally.
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Take the ham out of the marinade, keeping the marinade aside, and transfer the ham into a roasting pan.
  • Bake in the oven until golden brown, about 30 minutes.
  • In a saucepan, heat the marinade until it boils. In a small bowl, mix cornstarch and water until smooth. Add the mixture to the boiling marinade and simmer on low heat until thickened, about 5 minutes.
  • After 30 minutes of baking, generously spoon the flavorful hot marinade over the ham.
  • Continue baking the ham in the oven until the glaze is caramelized and the internal temperature reaches at least 145°F (65°C), about 1 1/2 hours. Remember to baste the ham with the glaze every 30 minutes.
