Chipotle Cheddar Wafers

Spicy chipotle cheese wafers elevate your bread basket.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 cup butter or margarine, softened
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon chipotle chile powder
  • 3 cups shredded extra-sharp Cheddar cheese (from two 8-oz bags)
Instructions:
  • In a large bowl, use an electric mixer on medium speed to beat all ingredients except cheese until a dough forms. Then mix in the cheese on low speed until a ball of dough forms. Shape the dough into 2 logs measuring 6x2 inches each. Wrap the logs in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
  • Preheat oven to 350°F. Slice dough into 1/4-inch pieces and place 1 inch apart on ungreased cookie sheets.
  • Bake for 22 to 25 minutes until golden and crisp around the edges. Transfer to cooling racks right away and let cool completely.
