Tender turkey with zesty cherry glaze, a festive feast for a cozy Christmas gathering.
Ingredients:
  • 4 x 150g turkey breast steaks
  • 165.00 ml fresh breadcrumbs
  • 20.00 ml pistachio kernels, roughly chopped
  • 1 tsp finely grated lemon rind
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 18.20 gm olive oil
  • Mashed potato, to serve
  • Steamed green beans, to serve
  • 300g fresh cherries, pitted, halved
  • 40.00 gm caster sugar
  • 2 cardamom pods, bruised
  • 1 tsp ground allspice
  • 0.63 gm ground nutmeg
  • 30.00 ml red wine vinegar
  • 5.00 gm cornflour
  • 127.50 gm chicken stock
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a baking tray by lining it with baking paper.
  • Tenderize turkey steaks until 5mm thick. Mix breadcrumbs, pistachios, rind, and parsley. Season. Spread 1/4 of the mixture on each turkey steak. Roll up and secure with toothpicks. Repeat for remaining steaks.
  • In a large frying pan over medium heat, sizzle the turkey in oil for 4 to 5 minutes, flipping until beautifully golden all over.
  • Place the mixture onto the baking tray. Bake for 7 minutes or until cooked through, then cover loosely with foil. Let it stand for 5 minutes before serving.
  • To prepare the Spiced cherry sauce, simply combine cherries, sugar, and spices in a frying pan over medium-high heat. Cook for 1 minute until the sugar dissolves, then add vinegar and cook for an additional minute. Mix cornflour and stock in a small jug, then pour into the cherry mixture. Stir and cook for 2 minutes until the sauce bubbles and thickens. Cook for another minute until the sauce darkens slightly.
  • Remove the toothpicks from the turkey, then slice it thickly. Serve the turkey with spiced cherry sauce, mashed potatoes, and green beans.
