Easy turkey involtini with cider butter sauce recipe

Fast, fabulous turkey roulade with burnt butter sauce, stuffed with nuts, cranberries, and herbs for a festive feast!
Ingredients:
  • 475g carton sweet potato mash
  • 45g (1/4 cup) hazelnuts, toasted, coarsely chopped
  • 40g (1/4 cup) dried cranberries
  • 6 slices prosciutto slices
  • 400g (4-pack) turkey breast strips
  • 6 large fresh sage leaves, plus 1500.00 ml extra, to serve
  • 80g butter
  • 80ml (1/3 cup) apple cider
  • Steamed green beans
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a small bowl, combine 1/3 cup sweet potato mash, 1 tablespoon hazelnuts, and 1 tablespoon dried cranberries. Season and mix well. Place 3 prosciutto slices side by side vertically on a chopping board. Put 1 turkey strip in the center, then spread half of the sweet potato mixture on top. Add another turkey strip and season. Lay 3 sage leaves down the stack. Wrap the prosciutto around the turkey to enclose. Repeat with the remaining ingredients.
  • In a spacious non-stick pan over medium heat, warm the oil. Add the turkey and sear for 6 minutes until it turns golden. Then, transfer the turkey to a baking tray and bake for 10 more minutes until fully cooked.
  • In a frying pan over medium heat, melt the butter until it turns brown. Add extra sage leaves and cook until crisp. Then, stir in cider, remaining hazelnuts, and dried cranberries, and simmer for 1 minute. Remove from heat, season, and cover to keep warm.
  • Heat the sweet potato mash according to package instructions, then portion it out with the turkey and beans on individual plates. Finish off by drizzling with the sauce before serving.
