Satisfying turkey chili with a blend of beans.
Ingredients:
  • 1 teaspoon vegetable oil
  • 1 pound ground turkey
  • 0.5 medium onion, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups chicken broth
  • 1 (16 ounce) can refried beans
  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 1 (15.5 ounce) can kidney beans, rinsed and drained
  • 2.5 tablespoons chili powder
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • salt and ground black pepper to taste
  • 2 tablespoons shredded Cheddar cheese
Instructions:
  • In a large pot over medium-high heat, heat vegetable oil. Add turkey and cook until browned and crumbly, stirring occasionally, for 5 to 7 minutes. Remove any excess grease.
  • Sauté the onion until translucent for about 5 minutes in the pot. Add tomatoes, broth, all beans, chili powder, garlic, paprika, oregano, cumin, salt, and pepper. Bring to a boil, then simmer covered on low heat for 30 minutes.
  • Serve the soup in bowls and top with a generous sprinkle of Cheddar cheese.
