Simplify Christmas with this easy and delicious turkey recipe, accompanied by 200g of your favorite stuffing. Enjoy a stress-free holiday meal!
Ingredients:
  • 1 x 6 kg higher-welfare turkey with giblets
  • 125 g unsalted butter
  • 1 clementine
  • ½ a bunch of fresh woody herbs, such as bay, sage, rosemary (15g)
  • 2 onions
  • 2 sticks of celery
  • 2 carrots
Instructions:
  • PREP - On Christmas Eve or on the day of, remove the turkey from the fridge 1 to 2 hours before cooking. Remove any giblets from the cavity and add them to the roasting tray. Rub room temperature butter all over the turkey, season with salt and pepper, stuff the main cavity with halved clementine and herbs, and lightly stuff the neck cavity. Place the turkey on a bed of roughly chopped vegetables in the tray, cover with foil. Preheat the oven to 180ºC/350ºF/gas 4. COOK - Roast the turkey in the preheated oven based on weight - 25 to 30 minutes per kilo for a higher-welfare bird, 35 to 40 minutes per kilo for a standard bird. Remove foil 45 minutes before the end to brown. Check for doneness by inserting a knife into the thigh - clear juices mean it's cooked. Rest the turkey covered for up to 2 hours. CARVE - Remove the wings and legs, then slice or pull the brown meat. Slice the breast meat thinly, then slice or pull the leg and lift the whole breast off the bone to slice. Serve warm.
