Gennaro’s turkey Milanese

Ingredients:
  • 1 x 800 g free-range turkey breast
  • 7 large free-range eggs
  • 200 g fresh white breadcrumbs
  • 100 g plain flour
  • 100 g soft Italian cheese, such as fontina or scamorza
  • 8 slices quality Parma ham
  • olive oil
  • truffle oil (optional)
  • 20 g Parmesan cheese to serve
Instructions:
  • Halve the turkey breast to make four equal-sized pieces. Flatten each piece to ½cm thick. Dip each turkey breast in flour, then egg, and coat in breadcrumbs. Add cheese and Parma ham, then repeat the flour, egg, and breadcrumb coating. Fry turkey in olive oil until golden and cooked through. Fry eggs until runny. Serve turkey topped with eggs, truffle oil, Parmesan, and watercress salad.
