Gennaro’s mini pizzas with hidden veg sauce

Invisible veggie-packed mini pizzas with top secret sauce that kids can't resist!
Ingredients:
  • 250 g strong white bread flour or tipo 00, plus extra for dusting
  • 250 g wholemeal flour
  • 1 x 7 g sachet dried yeast
  • fine semolina for dusting
  • 1 onion
  • 100 g mushrooms
  • 1 stick of celery
  • 1 carrot
  • 1 clove of garlic
  • 3 sprigs of fresh oregano
  • olive oil
  • 2 handfuls of baby spinach
  • 1 x 400 g tin of chopped tomatoes
  • 2 x 125 g balls of mozzarella
  • fresh oregano
  • Parmesan cheese
Instructions:
  • Preheat the oven to 220ºC/425ºF/gas 7 with a large flat baking tray upside-down inside. In a large bowl, combine the flours and a pinch of sea salt, then make a well in the center. Mix lukewarm water and yeast in a jug. Pour the mixture into the well and mix thoroughly until a rough dough forms - add more flour if needed to adjust stickiness. Knead in the bowl until smooth. Divide the dough, shape into balls, and place on a semolina-dusted tray. Cover with clingfilm and let it prove in a warm spot for 35 minutes, or until doubled in size. For the sauce, chop the onion, mushrooms, celery, carrot, garlic, and oregano. Heat oil in a pan, sauté the vegetables, then add oregano, chopped tomatoes, and water. Season and cook until soft. Blend until smooth. On a flour-dusted surface, shape a piece of dough into a crust, drizzle with oil, spread sauce, add mozzarella, desired toppings, and Parmesan. Transfer the pizza onto a semolina-dusted tray and slide onto the hot baking tray in the oven. Bake for 7-10 minutes for kids' pizzas and 15 minutes for larger ones until golden and crispy. Serve with a green salad.
