Gennaro’s easy Parmesan gnocchi

Instructions:
  • Prepare the sauce by peeling and roughly chopping the garlic, then sauté in a pan with 2 tablespoons of extra virgin olive oil until fragrant. Add the tomatoes and a quarter of a tin of water. Crush the basil in your hands, add to the pan, and season with salt and pepper. Simmer for 5 minutes, then set aside. For the gnocchi, boil water with salt and olive oil, then stir in flour until the mixture pulls away from the pan. Remove from heat, knead in Parmesan, cut into pieces, and shape into gnocchi. Cook in boiling water until they float to the surface, then transfer to the tomato sauce. Serve hot with a drizzle of olive oil, more Parmesan, and fresh basil leaves.
