Tilapia with Charred Cherry Tomatoes and Balsamic Reduction

Impress guests with a romantic white fish dinner perfect for Valentine's Day. Choose from tilapia, sole, or halibut for a delightful meal.
Ingredients:
  • 1 bunch fresh basil, divided
  • 1 bunch chopped fresh thyme
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced, divided
  • sea salt to taste
  • ground black pepper to taste
  • 4 (6 ounce) tilapia fillets
  • olive oil, divided
  • 2 cups cherry tomatoes, halved
  • 1 shallot, finely chopped
  • 2 tablespoons balsamic vinegar
  • 0.25 cup balsamic vinegar
Instructions:
  • Finely chop a quarter of the fresh basil leaves. Combine the chopped basil with thyme, minced garlic, lemon zest, salt, and pepper in a bowl. Rub the herb mixture onto the tilapia fillets and transfer them to an airtight container. Allow the fillets to marinate at room temperature for 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking dish by lining it with aluminum foil and greasing it with 1 tablespoon of olive oil.
  • Gently lay tilapia fillets in the baking dish, allowing any extra seasoning to fall off. Add cherry tomatoes, shallot, and whole basil leaves on top. Drizzle half of the lemon juice and 2 tablespoons of balsamic vinegar over the fish.
  • Place the fish in the oven and bake until it starts to flake, about 10 minutes.
  • In a saucepan, mix the rest of the lemon juice, 1 tablespoon of olive oil, and 1/4 cup of balsamic vinegar. Bring to a boil over medium-high heat. Cook until the mixture thickens to the consistency of molasses, about 5 to 10 minutes.
  • Position the oven rack 6 inches below the broiler element and preheat the broiler function of the oven.
  • Broil fish for about 5 minutes until tomatoes are charred. Remove from oven, discard liquid, and drizzle with balsamic reduction.
