Tilapia fillets seared to perfection, topped with zesty green tomato tapenade for a taste of summer in minutes.
Ingredients:
  • 1 teaspoon olive oil
  • 0.25 large onion, diced
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 2 green tomatoes, diced
  • 1 tablespoon capers
  • 1 pinch dried basil
  • salt and ground black pepper to taste
  • 1.5 pounds tilapia fillets
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
Instructions:
  • In a skillet over medium heat, sauté onion in 1 teaspoon of olive oil until translucent, about 5 minutes. Add diced tomatoes, green tomatoes, capers, basil, salt, and pepper. Cook for 5 more minutes, stirring occasionally until flavors meld together.
  • Sprinkle tilapia fillets with a pinch of salt and a dash of pepper for a perfect balance of flavors.
  • In a large skillet over medium heat, heat 1 tablespoon of olive oil. Cook tilapia fillets until the flesh flakes easily with a fork, about 3 minutes per side. Place on a serving platter.
  • Drizzle lemon juice into the skillet, swirling to scrape up the flavorful browned bits for 30 seconds to 1 minute. Pour this tasty mixture over the fillets.
  • Drizzle tomato mixture generously over the fillets right before serving.
