Tilapia Gyros

Try a twist on traditional Greek gyros with crispy oven-baked fish and tangy homemade tzatziki sauce.
Ingredients:
  • 1/4 cup plain fat-free Greek yogurt
  • 2 tablespoons finely chopped cucumber
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon chopped fresh dill weed or mint leaves
  • 2/3 cup Progresso™ plain panko crispy bread crumbs
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tilapia fillets or other mild-flavored, medium-firm fish fillets (3 oz each)
  • Cooking spray
  • 4 whole wheat pita breads (6 inch)
  • 4 leaves leaf lettuce, washed and patted dry with paper towels, torn
  • 1/2 cup thinly sliced cucumber
  • 2 plum (Roma) tomatoes, seeded and coarsely chopped
Instructions:
  • Preheat the oven to 425°F. Grease a cookie sheet with cooking spray, then combine the Tzatziki ingredients in a small bowl. Cover and refrigerate until ready to serve.
  • Combine bread crumbs, lemon peel, oregano, salt, and pepper in a small shallow dish. In another shallow dish, beat the egg with a fork. Dip one fish fillet into the egg, shaking off any excess. Coat both sides of the fillet with the bread crumb mixture, shaking off any extra crumbs, and place it on a cookie sheet. Repeat the process with the remaining fish fillets. Spray the tops of the breaded fish with cooking spray. Wrap the pita breads in foil.
  • Bake the fish for 20 to 25 minutes, or until it flakes easily with a fork. Add foil-wrapped pita breads to the oven for the last 10 minutes of baking.
  • Place a crisp lettuce leaf on one side of each fluffy pita bread. Add a flavorful fish fillet, crunchy cucumber, and juicy tomato. Finish with a drizzle of creamy tzatziki. Fold the other half of the pita bread over the delicious fillings and enjoy!
