Baked seafood dinner with Muir Glen® tomatoes and basil for a delicious touch.
Ingredients:
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons grated lemon peel
  • 2 teaspoons olive oil
  • 4 tilapia fillets, about 1/2 inch thick (1 lb)
  • 3 tablespoons chopped fresh basil leaves
  • 1/4 teaspoon lemon-pepper seasoning
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
  • 3 tablespoons grated or shredded Parmesan cheese
Instructions:
  • Preheat oven to 400°F. Grease an 11x7-inch (2-quart) glass baking dish with cooking spray. In a shallow dish, mix together lemon juice, lemon peel, and oil. Coat fillets with the lemon mixture and place them in the baking dish.
  • Season fillets generously with fragrant basil, salt, and pepper. Top with flavorful tomatoes and a sprinkle of cheese. Seal the dish with foil and bake in the oven for 15 to 20 minutes, or until the fish is tender and flakes easily with a fork.
