Quick tilapia topped with flavorful tomato and olive tapenade for a delicious weeknight meal.
Ingredients:
  • 4 (6 ounce) tilapia fillets
  • 1 tablespoon olive oil
  • 0.5 cup chopped tomatoes
  • 5 pitted Kalamata olives, chopped
  • 1 tablespoon chopped onion
  • 1 tablespoon capers
Instructions:
  • Preheat the oven to 375°F (190°C) for baking perfection.
  • Lay tilapia fillets on a baking sheet and generously coat with olive oil.
  • Bake tilapia in the preheated oven for 10 to 15 minutes until it turns opaque and flakes easily with a fork.
  • In a small saucepan, mix chopped tomatoes, olives, onion, and capers. Cook over medium-high heat, stirring occasionally, until tomatoes break down and flavors meld, about 5 to 10 minutes. Serve the tapenade over baked fillets.
