Grilled tilapia packets with tomatoes, artichokes, and olives - a simple, delicious 30-minute meal with minimal clean-up.
Ingredients:
  • 1 cup grape tomatoes, halved
  • 1 cup artichoke hearts, chopped
  • 1/2 cup pitted kalamata olives, halved
  • 2 tilapia fillets, rinsed
  • Salt and pepper, if desired
  • Lemon wedges
Instructions:
  • Preheat gas or charcoal grill. Combine tomatoes, artichoke hearts, and olives in a medium bowl; set aside.
  • Lay out 2 large sheets of heavy-duty foil. Put 1 tilapia fillet in the center of each sheet. Evenly spoon tomato mixture over the fish. Fold and seal the edges of the foil tightly, leaving space for heat circulation and expansion.
  • Grill the fish packets over medium heat with the grill covered for 20 minutes or until the fish flakes easily with a fork.
  • Gently tear open the packets. Season with salt and pepper, and garnish with lemon wedges before serving.
