Create a flavorful Mediterranean chicken dish with feta, oregano, tomatoes, and olives using a Betty Crocker Diabetes Cookbook recipe.
Ingredients:
  • 1 package (4 oz) crumbled basil-and-tomato feta cheese
  • 2 tablespoons grated lemon peel
  • 1 teaspoon dried oregano leaves
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 4 plum (Roma) tomatoes, each cut into 3 slices
  • 1 small red onion, finely chopped (1 cup)
  • 20 pitted kalamata olives
Instructions:
  • Preheat the grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Combine cheese, lemon peel, and oregano. Arrange 1 chicken breast, 3 tomato slices, 1/4 cup onion, and 5 olives in the center of each foil sheet. Top each with 1/4 of the cheese mixture.
  • Wrap each packet by bringing up 2 sides of the foil over the chicken and vegetables so that the edges meet. Seal the edges tightly with a 1/2-inch fold, then fold again to allow space for heat circulation and expansion. Finally, fold the remaining sides to seal the packet.
  • Grill the foil packets over medium heat with the grill covered for 20 to 25 minutes. Rotate the packets halfway through cooking. Ensure the chicken reaches an internal temperature of 170°F by cutting into the thickest part to check for clear juices. Transfer the packets to plates, make a large X on top of each packet, and then carefully fold back the foil before serving.
