Grilled Greek Chicken with Red Wine and Garlic

Grill with Mediterranean flavors using olive oil, herbs, garlic, and olives for a delicious twist.
Ingredients:
  • 1/2 cup dry red wine or Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons chopped fresh or 1 tablespoon dried basil leaves
  • 1 tablespoon chopped fresh or 1 teaspoon dried mint leaves
  • 3 tablespoons olive or vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 1/2 to 2 lb cut-up whole chicken pieces
  • 1 jar (4 3/4 oz) pitted kalamata or ripe olives, drained
Instructions:
  • Combine all ingredients, excluding chicken and olives, in a shallow glass, plastic dish, or resealable bag. Add chicken and ensure it is evenly coated with the marinade. Cover the dish or seal the bag, then refrigerate for 1 hour.
  • Preheat your gas or charcoal grill. Take the chicken out of the marinade and keep the marinade aside. Place the chicken skin side down on the grill over medium heat. Cover and grill for 15 minutes. Flip the chicken and baste with the reserved marinade. Cover and continue grilling for 20-40 minutes, basting occasionally, until the juices run clear when the thickest part is cut (170°F for breasts; 180°F for thighs and drumsticks). Dispose of any leftover marinade. Serve the chicken with olives.
