Grilled Greek yogurt-marinated chicken with lemon, garlic, herbs, and a spicy harissa sauce.
Ingredients:
  • 0.5 cup plain low-fat Greek yogurt
  • 4 cloves garlic, crushed
  • 0.5 lemon, juiced
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 teaspoon herbes de Provence
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 (5 pound) whole chicken, cut into 8 pieces
  • 1 tablespoon lemon juice
  • 1 teaspoon harissa
Instructions:
  • Combine yogurt, garlic, lemon juice and zest, olive oil, paprika, herbes de Provence, salt, and black pepper in a bowl. Transfer mixture to a sealed plastic bag, add chicken, coat well, remove excess air, seal, and refrigerate for at least 3 hours.
  • Prepare the grill by preheating it to medium-high heat and greasing the grate lightly with oil.
  • Prepare a tangy and spicy sauce by mixing yogurt, fresh lemon juice, and flavorful harissa in a small bowl until perfectly blended. Set aside for later use.
  • Transfer the chicken to a plate or baking sheet lined with paper towels, discarding the marinade. Pat the chicken dry using more paper towels and season with a pinch of salt.
  • Start by searing the chicken skin-side down on the hot grill for 2 minutes. Then, flip the pieces and cook over indirect heat with the lid down, turning occasionally, until the chicken is nicely browned and fully cooked, for about 30-35 minutes. Use an instant-read thermometer to ensure the thickest part of the thigh reads 165°F (74°C).
  • Present the chicken accompanied by a side of sauce.
