Juicy grilled chicken thighs marinated in refreshing Greek yogurt, ideal for summer BBQs.
Ingredients:
  • 1 cup full-fat plain Greek yogurt
  • 1 cup lightly packed chopped cilantro
  • 2 tablespoons lemon juice
  • 1 tablespoon jarred minced garlic
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground black pepper
  • 3.5 pounds chicken thighs
Instructions:
  • Combine Greek yogurt, fresh cilantro, zesty lemon juice, minced garlic, a pinch of salt, earthy cumin, spicy cayenne, and a dash of pepper in a spacious bowl. Add chicken thighs to a large resealable plastic bag, pour in the yogurt mixture, and ensure the chicken is evenly coated.
  • Allow the chicken to tenderize in the fridge for 3 to 8 hours.
  • Allow the chicken to come to room temperature for 30 minutes, then discard the marinade.
  • Preheat the grill until it reaches medium heat and lightly oil the grate. Grill the chicken, turning occasionally, until grill marks form, approximately 5 minutes on each side.
