Greek Lemon Chicken Skewers with Tzatziki Sauce

Succulent grilled chicken skewers marinated in tangy yogurt and lemon, grilled with zesty lemon slices, and paired with refreshing cucumber tzatziki sauce.
Ingredients:
  • 1 1/4 pound boneless, skinless chicken breasts, trimmed of excess fat
  • 2 tablespoons plain yogurt
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1 tablespoon minced fresh oregano (or 1 1/2 teaspoons dried oregano)
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil plus more for the grill
  • 2 lemons, thinly sliced
  • Tzatziki:
  • 1 cup plain yogurt
  • 2 cloves of garlic, minced (about 2 teaspoons)
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 cucumber, peeled
Instructions:
  • Prepare the skewers: Soak 4 flat skewers or 8 regular round skewers in water while you get everything else ready for the recipe.
  • Prepare the chicken: Cut the chicken breasts into bite-sized chunks. Season with salt, then mix in yogurt, garlic, oregano, pepper, lemon juice, and olive oil. Ensure the chicken is coated well and marinate for 30 minutes to an hour.
  • Prepare yogurt tzatziki sauce: Combine yogurt, minced garlic, salt, pepper, and lemon juice in a medium bowl. Grate the cucumber using the large holes of a box grater, then squeeze out excess moisture with your hands. Mix the grated cucumber into the yogurt mixture.
  • Skewer chicken and lemon slices: Heat the grill for direct high heat. As it heats up, assemble the skewers using flat bamboo or metal skewers, or double up regular bamboo skewers for easier grilling. Alternate threading chicken pieces with folded lemon slices onto the skewers.
  • Prepare the grill by brushing the grates with olive oil using a paper towel dipped in olive oil and held with tongs. Next, brush olive oil over the chicken skewers. Grill the chicken skewers over high heat, searing for 2-3 minutes on each side until browned and cooked through. Serve hot with tzatziki sauce.
