Tangy Greek skewers - healthy and delicious!
Ingredients:
  • 4 preserved lemon quarters, rinsed, patted dry with paper towel
  • 2 x 450g jars pitted green olives, drained
  • 8 (about 1.3g) chicken thigh fillets, cut into 2cm pieces
  • Salt & freshly ground
  • black pepper
  • 80ml (1/3 cup) olive oil
  • 260g (1 cup) Greek-style natural yoghurt
  • 2 garlic cloves, crushed
  • 20.00 ml chopped fresh dill
Instructions:
  • Remove flesh from lemon rind and chop it finely. Use the chopped lemon rind to stuff the olives.
  • Skewer the chicken and olives, then generously season with salt and pepper.
  • In a frying pan over medium-high heat, heat 2 tablespoons of oil. Cook the skewers for 5 minutes on each side or until they are fully cooked.
  • Mix together the yogurt, remaining oil, garlic, and dill in a small bowl. Season with salt and pepper to taste.
  • Enjoy the skewers with the delectable yoghurt mixture.
