Elevate grilled chicken skewers by marinating in olive oil, lemon juice, vinegar, herbs, and spices for maximum flavor and juiciness.
Ingredients:
  • 0.75 cup white wine vinegar
  • 0.5 cup olive oil
  • 0.25 cup freshly squeezed lemon juice
  • 0.5 cup fresh mint leaves
  • 6 cloves garlic
  • 4 teaspoons white sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon freshly ground black pepper
  • 3 pounds boneless skinless chicken thighs, cut into 3 pieces
  • 6 skewers
  • 6 Italian-style hoagie buns
Instructions:
  • Blend vinegar, olive oil, lemon juice, mint, garlic, sugar, oregano, basil, salt, red pepper flakes, and black pepper until smooth, for about 30 seconds.
  • Add chicken thighs to a spacious resealable plastic bag, pour in the marinade, ensure the chicken is completely coated by massaging it gently. Remove air from the bag, seal it, and marinate in the refrigerator for 24 hours, flipping occasionally.
  • Get your grill sizzling hot outdoors and give the grate a light coat of oil.
  • Skewer the chicken and season with salt. Transfer marinade to a saucepan, simmer, and reduce for about 2 minutes.
  • Grill skewers until chicken is fully cooked, reads at least 165 degrees F on a thermometer, and juices run clear, about 5-6 minutes per side. Let the meat rest for a few minutes after grilling.
  • Toast the hoagie rolls until golden brown, then generously spread on the reserved marinade. Next, gently place a skewer on each roll and expertly remove it, leaving the succulent chicken nestled in the warm bun.
