Greek Yogurt Cornish Game Hens

Marinated Cornish game hens grilled to perfection with Greek yogurt and herbs, ideal for summer grilling.
Ingredients:
  • 2 Cornish game hens
  • 6 tablespoons Greek yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon ground paprika
  • 0.5 teaspoon olive oil
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon ground thyme
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried rosemary
  • 0.25 teaspoon dried savory
Instructions:
  • Add the Cornish game hens to a spacious resealable plastic bag.
  • Combine Greek yogurt, lemon juice, paprika, olive oil, garlic salt, thyme, black pepper, oregano, rosemary, and savory in a small bowl. Pour the yogurt mixture over game hens, ensuring that they are fully coated and some of the mixture gets inside their cavities. Seal the bag, removing air, and refrigerate for 2 hours to overnight.
  • Get your grill ready by preheating it on low heat and giving the grate a light oiling.
  • Take out the game hens from the bags and gently dry them. Dispose of the yogurt mixture. Grill until the skin begins to brown, approximately 3 minutes on each side. Cover the grill and continue cooking the game hens, turning occasionally, until a thermometer reads 165 degrees F (74 degrees C) when inserted into the thickest part of the thigh near the bone, for about 15 to 20 minutes.
  • Take the game hens off the grill and carefully butterfly them along the breast side to lay them flat. Place them back on the grill, skin-side down, cover, and grill until golden brown, around 4 minutes.
