Creamy Greek yogurt chicken with Parmesan and ranch is a simple and tasty weeknight dish!
Ingredients:
  • 1 cup plain Greek yogurt
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup panko bread crumbs, or as needed
  • 0.5 (1 ounce) package ranch dressing mix
  • 1 teaspoon garlic powder
  • 1 teaspoon prepared yellow mustard, or to taste
  • 3 small skinless, boneless chicken breast halves, pounded 1/2-inch thick
Instructions:
  • Preheat the oven to 375°F (190°C) for ideal baking conditions.
  • Combine yogurt, Parmesan cheese, bread crumbs, dressing mix, garlic powder, mustard, and pepper in a bowl, ensuring they are well combined. Coat each chicken breast with the yogurt mixture thoroughly. Transfer the coated chicken breasts into a baking dish.
  • Place in the oven and bake for 20 minutes until chicken breasts are cooked through. Switch to the broiler and broil, turning once, until bread crumbs are golden and chicken is no longer pink, about 2 to 4 minutes per side. Ensure internal temperature reaches 165°F (74°C) using an instant-read thermometer.
