Zucchini fritters with mint yoghurt

Ingredients:
  • 3 medium zucchini, coarsely grated
  • 30.00 ml grated parmesan cheese
  • 2 green onions, finely sliced
  • 82.50 ml dried breadcrumbs
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 1 egg, lightly beaten
  • 36.40 gm olive oil
  • 125.00 ml plain yoghurt
  • 40.00 ml chopped fresh mint leaves
Instructions:
  • Press out any extra moisture from the zucchini. Mix together zucchini, cheese, onion, breadcrumbs, parsley, and egg in a bowl. Season with salt and pepper.
  • In a large frying pan over medium heat, heat half of the oil. Spoon 2 heaped tablespoons of zucchini mixture into the pan and flatten with a spatula. Repeat this process to make a total of 4 fritters. Cook for 2 to 3 minutes on each side until golden brown and cooked through. Transfer the cooked fritters to a plate lined with paper towel. Repeat the process with the remaining oil and zucchini mixture to make a total of 8 fritters.
  • Prepare refreshing mint yogurt by combining all ingredients in a small bowl. Stir until well mixed. Enjoy with crispy fritters.
