Ingredients:
  • 9 zucchini, grated
  • 120.00 ml plain flour
  • 3 garlic cloves, crushed
  • Grated rind of 1 lemon
  • 1 egg, lightly beaten
  • 18.40 gm vegetable oil
  • 125g sour cream
  • 4 slices smoked salmon
Instructions:
  • Place zucchini in a sieve over a bowl, sprinkle with 1 teaspoon sea salt, and gently mix. Let it sit for 15 minutes, then rinse. Wrap in a tea towel and squeeze out excess liquid. Mix zucchini with flour, garlic, lemon rind, egg, and season with black pepper to taste.
  • Heat oil in a non-stick frypan over medium heat. Spoon mixture into pan and fry for 1-2 minutes on each side until golden brown, working in batches and adding more oil as needed.
  • Place a double layer of fritters on individual plates. Add a dollop of sour cream, a slice of smoked salmon, and a sprinkle of black pepper on top. Serve right away.
