Super zucchini fritters

Delicious zucchini fritters with flavorful tomato and creamy goat's cheese. Perfect for snacking or as a main dish.
Ingredients:
  • 200g packet amaranth, rinsed
  • 435ml (1 3/4 cups) water
  • 187.50 ml fresh mint sprigs
  • 187.50 ml fresh dill sprigs
  • 500g zucchini, coarsely grated, excess moisture removed
  • 3 green shallots, thinly sliced
  • 1 lemon, rind finely grated, cut into wedges
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 3 eggs, lightly whisked
  • 80g (1/2 cup) buckwheat flour
  • 30g (1/4 cup) LSA
  • 5.00 gm gluten-free baking powder
  • 36.40 gm extra virgin olive oil
  • 200g punnet sweet grape tomatoes, halved
  • 150g goat’s cheese, crumbled
  • 100g fresh ricotta, crumbled
  • 60ml (1/4 cup) milk
Instructions:
  • In a small saucepan, combine amaranth and water over medium heat. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until tender and water has evaporated. Let it stand covered for 5 minutes, then transfer to a large bowl to cool completely.
  • Finely chop 1/2 cup each of fresh mint leaves and dill. Combine with zucchini, 2 shallots, lemon zest, coriander, cumin, and an egg in the amaranth mixture. Mix well. Then add flour, LSA, and baking powder. Season to taste and combine everything thoroughly.
  • In a large non-stick frying pan over low heat, heat 1 teaspoon of oil. Spoon 3 heaped 1⁄4-cupfuls of batter into the pan. Cook for 2-3 minutes until golden brown. Flip and cook for another 2 minutes until fully cooked. Place on a paper towel-lined tray to drain excess oil. Repeat with the rest of the batter, adding oil as needed between batches.
  • Prepare the whipped goat's cheese by placing all the ingredients in a food processor bowl. Season with your favorite spices. Blend until smooth and well combined.
  • In a small bowl, mix together tomatoes, the rest of the mint, dill, shallot, and 2 teaspoons of oil. Season with salt and pepper, then add a splash of fresh lemon juice. Enjoy with a tomato salad and creamy whipped goat’s cheese.
