Super-easy green couscous

Whip up a quick, nutritious green couscous side dish in just 20 minutes.
Ingredients:
  • 250.00 ml couscous
  • 99.00 gm basil pesto
  • 250.00 gm boiling water
  • 1 bunch asparagus, trimmed, halved lengthways and crossways
  • 1 zucchini, peeled into ribbons
  • 9.20 gm extra virgin olive oil
  • 150g haloumi, sliced
  • 250.00 ml watercress sprigs
  • 82.50 ml Sicilian olives
Instructions:
  • In a large heatproof bowl, combine couscous and pesto. Pour boiling water over them and stir well. Top with asparagus and zucchini, then cover and let sit for 5 minutes until water is absorbed.
  • Heat oil in a frying pan over medium-high heat until shimmering. Add haloumi and cook, turning occasionally, for 3 minutes or until golden brown. Place on a paper towel-lined plate to remove excess oil.
  • Separate couscous grains with a fork. Tear haloumi into pieces. Add watercress sprigs, Sicilian olives, haloumi, and lemon juice to couscous. Season with salt and pepper. Toss to combine. Serve.
