Easy and delicious baked salmon patties made with canned salmon, green onions, and crushed saltine crackers. Perfect for a quick dinner any night!
Ingredients:
  • 2 cups crushed saltine crackers, divided
  • 1 (7 ounce) can salmon, drained and flaked
  • 1 egg, beaten
  • 2 green onions, finely chopped
  • 1 tablespoon olive oil
  • lemon pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • In a large bowl, mix together 2/3 cup cracker crumbs, salmon, egg, green onions, and olive oil. Season with lemon pepper. Shape mixture into 8 patties and coat them with the remaining cracker crumbs. Place the patties in a single layer on a baking sheet.
  • Place in the oven and bake, flipping halfway through, until both sides are golden brown, approximately 10 minutes.
