Elevate scrambled eggs with luxurious salmon roe or caviar.
Ingredients:
  • 10 free-range eggs
  • 250ml (1 cup) thin cream
  • 50g (2 1/2 tbsp) butter
  • Sea salt & freshly ground black pepper
  • 4 thick slices sourdough bread, toasted, buttered, to serve
  • 50g Tasmanian salmon roe or Keta Caviar, to serve
Instructions:
  • In a large bowl, use a balloon whisk to combine the eggs and cream. Add half of the butter in small pieces and whisk until incorporated. Season with sea salt and pepper to taste.
  • Melt the remaining butter in a medium heavy-based frying pan over low heat until foamy. Gently push the egg mixture from one side of the pan to the other in 4 different directions using a flat-bottomed wooden spoon. Repeat every 10 seconds, ensuring to push around the edges to prevent sticking. Cook for 5 minutes or until three-quarters of the egg mixture is cooked while still creamy and slightly liquid.
  • Immediately serve the scrambled eggs on toasted sourdough with a generous dollop of caviar on top.
