Whip up a delightful brunch with scrambled eggs, salsa, cheese, and tortillas in tasty chilaquiles that are customizable for any group size.
Ingredients:
  • 5 tablespoons corn oil
  • 8 (8 inch) corn tortillas, cut into triangles
  • 6 eggs
  • 1 cup chipotle salsa
  • 1 cup shredded pepper Jack cheese
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet over medium-high heat, fry tortilla triangles in oil until they begin to turn golden brown and crisp, about 3 to 5 minutes. Add salsa, lower heat to medium-low, and gently stir with a spatula to combine. Cook for an additional 5 minutes.
  • In a small bowl, whisk together eggs, salt, and pepper. Pour over tortillas in the pan over medium-high heat. Gently scramble until eggs are just set. Sprinkle with pepper Jack cheese, cover, and let sit off the heat for 3 minutes to melt the cheese.
