Super easy haloumi salad recipe

Quick and delicious vegetarian haloumi salad ready in just 20 minutes!
Ingredients:
  • 250g pkt pearl couscous
  • 2 x 250g pkts haloumi sliced
  • 10.00 gm Moroccan spice mix
  • 2 zucchini, sliced
  • 250g cherry tomato medley, halved
  • 125.00 ml fresh continental parsley leaves
  • 125.00 ml fresh mint leaves, torn
  • 24.00 gm tahini
  • 40.00 ml Greek yoghurt
  • 1 small garlic clove, crushed
  • 1 lemon, rind finely grated
  • Juice of 1 lemon
  • 40.00 ml pomegranate arils or 1 pomegranate, arils removed
  • 2 wholemeal pita breads, toasted, torn
Instructions:
  • Prepare fluffy couscous by cooking it in a pot of boiling water according to the instructions on the packet, then drain.
  • After patting the haloumi dry with paper towel, generously coat it with the spice mix. Using a non-stick frying pan, heat it over medium heat and then cook the haloumi for 1-2 minutes on each side until it reaches a golden color. Once done, set it aside. Spray the pan with oil once more and quickly cook the zucchini for 1-2 minutes until it develops a slight color.
  • In a big bowl, mix together couscous, zucchini, tomatoes, parsley, and mint. Season generously. In a small bowl, blend tahini, yogurt, garlic, and lemon zest. Season with salt and pepper. Adjust the flavor with lemon juice as desired.
  • Plate the salad in individual bowls or on a platter. Add the haloumi and pomegranate on top, then drizzle with dressing. Serve alongside pita bread.
