Super-easy roast chicken and vegetables

Engage kids in cooking with simple, nutritious roast chicken.
Ingredients:
  • 2kg whole chicken
  • 1 medium lemon, roughly chopped
  • 1 celery stalk, trimmed, chopped
  • 1 dried bay leaf
  • 18.20 gm olive oil
  • 500g chat potatoes
  • 3 small carrots, peeled, thickly sliced
  • 4 garlic cloves, peeled
  • 1 bunch asparagus, trimmed
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Rinse the chicken under cold water and pat dry (inside and out) with paper towels. Put the chicken in a large roasting pan and stuff the cavity with lemon, celery, and bay leaf. Drizzle with oil, sprinkle with salt and pepper, then tie the legs together with kitchen string.
  • Roast the chicken for 30 minutes, then add potatoes, carrots, and garlic to the pan. Continue to roast for 50-55 minutes until the chicken is cooked through. Toss in asparagus during the last 5 minutes of roasting in the pan juices.
  • Present the chicken alongside a colorful array of fresh vegetables and the delicious pan juices.
