Elevate your culinary skills with this flavorful and soothing dish.
Ingredients:
  • 1.5kg whole side of salmon (1 large fillet)
  • 1 lemon, thinly sliced
  • 2 makrut lime leaves, torn
  • 1 lemongrass stalk, quartered, bruised
  • 250.00 ml loosely packed fresh coriander leaves
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Line a large baking dish with overlapping foil sheets. Arrange the salmon on top of the foil. Add slices of lemon, fragrant lime leaves, fresh lemongrass, and aromatic coriander. Season generously with salt and pepper.
  • Fold 2 long sides of foil to the center to seal. Roll up ends to enclose the salmon. Bake for 30 minutes until medium or cooked as desired. Let cool to room temperature, then cover and refrigerate. Before serving, transfer to a platter and garnish with coriander.
