Delightful lemon sorbet with star-shaped carambola for a heavenly visual and taste experience.
Ingredients:
  • 250ml (1 cup) water
  • 215g (1 cup) caster sugar
  • 4 makrut lime leaves, finely shredded
  • 3cm-piece ginger, peeled, thinly sliced
  • 1 stem lemon grass, pale section only, quartered lengthways
  • 4 carambola (star fruit), thinly sliced crossways
  • Lemon sorbet, to serve
Instructions:
  • In a medium saucepan, combine the water and sugar over low heat. Stir constantly for 5 minutes until the sugar dissolves. Increase heat to medium-high and bring to a boil. Stir in lime leaves, ginger, and lemongrass. Simmer for 5 minutes until the syrup thickens. Let it cool for 15 minutes before using.
  • Divide the star fruit and sorbet into serving bowls, then drizzle with the syrup before serving right away.
