Delicious star fruit, ricotta, and nut combo makes a perfect dessert or breakfast option!
Ingredients:
  • 10g (2 tsp) butter or margarine
  • 25g (1/3 cup) flaked almonds
  • 200g fresh ricotta
  • 28.60 gm honey
  • 0.63 gm ground nutmeg
  • 3 carambolas (star fruit), cut into 5mm-thick slices
Instructions:
  • In a small frying pan, melt the butter or margarine over medium heat. Cook the flaked almonds, stirring constantly, until golden, for 1-2 minutes. Drain on paper towel.
  • In a small bowl, combine ricotta, honey, and nutmeg, and beat with electric beaters until smooth. Gently fold in the flaked almonds. Serve the creamy ricotta mixture over carambola slices on plates.
