Star fruit adds a tropical twist to refreshing iced tea, ideal for sunny days.
Ingredients:
  • 1 carambola (star fruit), sliced crossways into 5mm slices
  • 42.00 gm fresh lemon juice
  • 18g (1/4 cup) Ceylon orange pekoe tea (Twinings brand)
  • 82.50 ml firmly packed fresh mint leaves
  • 40.00 gm caster sugar
  • 1.75L (7 cups) boiling water
Instructions:
  • Arrange carambola slices on a baking tray, drizzle with half of the lemon juice, cover with cold water, and freeze for 6 hours or until solid.
  • In a large heatproof bowl, mix tea leaves, mint, and sugar. Pour boiling water over the mixture and let it steep for 15 minutes. Strain the tea through a fine sieve into a large jug, add the remaining lemon juice, and let it cool for 30 minutes.
  • Fill tall glasses with tea. Take the carambola ice out of the freezer, separate it into pieces with a carambola slice in each piece. Add a few pieces to each glass and serve right away.
