Savor the zesty flavors of makrut lime chicken in this delicious pasta creation.
Ingredients:
  • 200g penne rigate
  • 1/2 makrut lime roast chicken
  • 100g semi-dried tomatoes, thinly sliced
  • 82.50 ml finely shredded fresh basil
  • 60ml (1/4 cup) fresh lemon juice
  • 60ml (1/4 cup) extra virgin olive oil
  • 100g fresh ricotta, crumbled
  • 1 x 75g pkt toasted pine nuts
Instructions:
  • Prepare the pasta in a saucepan of boiling salted water according to the instructions on the package until it's al dente. Then, drain the pasta.
  • Use a fork to shred the chicken into large pieces, discarding the bones.
  • Toss pasta, chicken, semi-dried tomatoes, and basil in a bowl. Combine lemon juice and oil in a jug, season with salt and pepper. Pour dressing over pasta mixture, toss to coat evenly.
  • Combine the creamy ricotta with the pasta, tossing gently until blended. Portion into individual bowls, and garnish with pine nuts before serving.
