Quick and easy meal for brunch or supper, ready in under 30 minutes.
Ingredients:
  • 3 eggs
  • 2 tablespoons milk
  • 1/8 teaspoon pepper
  • 1 tablespoon butter or margarine
  • 1 cup cut-up fresh asparagus spears (about 4 oz)
  • 1 can (6 to 7 oz) red or pink salmon, drained, flaked
  • 1/2 cup shredded dill-Havarti cheese (2 oz)
Instructions:
  • In a medium bowl, whisk together eggs, milk, and pepper until smooth.
  • In a 10-inch nonstick skillet, gently melt butter over medium heat. Add asparagus and sauté for 3 to 5 minutes, stirring occasionally, until it reaches the perfect crisp-tenderness.
  • Once you've reduced the heat to medium-low, carefully add the egg mixture to the skillet and incorporate the salmon by gently stirring. Cover and cook for 6 to 8 minutes until the eggs are firm. Avoid stirring during this time. Next, sprinkle cheese over the top, cover again, and cook for an additional 1 to 2 minutes until the cheese is melted.
