Effortless Southwest quinoa with black beans, tomatoes, and green chilies cooked perfectly in a rice cooker.
Ingredients:
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®), undrained
  • 1 (12 ounce) box quinoa
  • 2 cups water
  • 1 (1.25 ounce) package dry taco seasoning mix
Instructions:
  • Combine black beans, diced tomatoes with green chile peppers, quinoa, water, and taco seasoning in a rice cooker.
  • Cook the quinoa mixture on the "brown rice" setting for approximately 1 hour.
