Zucchini & haloumi fritters with tabouli

Try these quick and easy veggie fritters for a stress-free Monday night meal!
Ingredients:
  • 150g (1 cup) plain flour
  • 2.00 gm baking powder
  • 1 egg, lightly whisked
  • 250g haloumi, coarsely grated
  • 2 zucchini, ends trimmed, coarsely grated
  • 30.00 ml chopped fresh dill
  • Olive oil, to shallow-fry
  • 200g green beans, topped
  • 1 x 350g ctn bought tabouli
  • 120g (1/2 cup) bought eggplant dip
Instructions:
  • In a large bowl, sift the flour and baking powder, then create a well in the center. Add the egg and 125ml (1/2 cup) water. Use a balloon whisk to gently combine, adding more water if needed until a smooth batter forms. Mix in the haloumi, zucchini, and dill, then season with pepper.
  • In a large frying pan, pour enough oil to reach 1cm up the side of the pan and heat over medium-high heat. Spoon 1/3-cup portions of the mixture into the pan and fry for 2 minutes on each side until golden and cooked through. Place the cooked portions on a tray lined with paper towel.
  • While you wait, boil a medium saucepan filled with lightly salted water. Once boiling, add the beans and cook for 3 minutes until they are vibrant green and tender-crisp. Drain the beans and transfer them to a large bowl. Mix in the tabouli until well combined.
  • Plate the tabouli mixture and zucchini fritters. Add a dollop of eggplant dip on top of the fritters before serving.
