Delicious corn fritters with sweet corn, tangy feta, and a crispy outside. Easy to make and versatile - swap corn for creamed corn or fresh corn, add capsicum and zucchini. Serve with sweet chilli sauce, avocado, and rocket. Check out our giant skillet haloumi and zucchini fritter recipe too!
Ingredients:
  • 150.00 gm self-raising flour
  • 84.98 gm milk
  • 2 x 420g cans corn kernels, drained
  • 40.00 ml chopped chives
  • 100g fetta, crumbled
  • 30g piece cold butter
  • 1 small avocado, cut into wedges
  • 30g baby rocket
  • 44.00 gm sweet chilli sauce, to serve
Instructions:
  • In a large mixing bowl, create a well in the center of the flour. Whisk together eggs and milk in a separate jug using a fork, then slowly pour into the flour while gently stirring to combine. Gently fold in the corn, chives, and feta until just combined, being careful not to overmix to keep the fritters tender.
  • Wrap butter in a paper towel for easy greasing. Heat a large frying pan over medium heat, then grease with the butter. Drop 1/4 cupfuls of mixture into the pan in batches. Cook until golden brown underneath (2-3 mins), then flip and cook the other side. Repeat with more butter and fritter mixture.
  • Top fritters with avocado slices and a handful of rocket. Drizzle with sweet chilli sauce before serving.
