Crispy vegetarian corn fritters made extra delicious with cheese!
Ingredients:
  • 420g can corn kernels, drained, rinsed
  • 4g pkt lightly dried chives
  • 200g haloumi cheese, grated
  • 200g cheddar cheese, grated
  • 250.00 ml plain flour
  • 1 tsp all-purpose seasoning
  • 193.13 gm milk
  • Rice bran oil, for shallow frying
  • Sea salt, to serve
  • Chopped tomato, to serve
  • Chopped avocado, to serve
Instructions:
  • In a large bowl, mix together corn, chives, 100g haloumi, 100g cheddar, flour, and seasoning. Pour in the milk and stir until well combined. In another bowl, combine the remaining 100g haloumi and 100g cheddar.
  • Heat oil until it reaches a depth of 1cm in a large frying pan over medium-high heat. Spoon 1/4 cup of batter into the pan and cook for about 2 minutes, or until golden brown underneath.
  • Top each fritter with a sprinkle of the cheese mixture and cook for an additional 2 minutes until they are fully cooked and the cheese is golden brown. Transfer to a plate, cover to retain warmth, and continue with the remaining batter and cheese.
  • Season fritters with a pinch of sea salt and accompany with fresh tomato and avocado.
