Crispiest-ever smashed potatoes with cheese and bacon crumb

Indulge in crispy roast potatoes adorned with cheesy bacon crumb, served with sour cream and chives for the ultimate comfort food experience.
Ingredients:
  • 1kg baby red potatoes
  • 45.50 gm extra virgin olive oil
  • 200g packet real bacon pieces, finely chopped
  • 165.00 ml pizza cheese
  • 40.00 ml panko breadcrumbs
  • 117.50 gm sour cream
  • 20.00 ml finely chopped fresh chives
  • Baby French kale leaves, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Toss potatoes with 2 tablespoons of oil in a large baking dish. Season with salt and pepper. Bake for 40 minutes until potatoes are tender.
  • Heat the rest of the oil in a medium frying pan over medium heat. Cook the bacon for 4 to 5 minutes until it turns lightly golden. Then, drain it on a paper towel.
  • Lightly crush the potatoes with a fork. Sprinkle with cheese and breadcrumbs. Bake for 15 minutes until the potatoes are crisp and the cheese has melted. Finish with a dollop of sour cream, crispy bacon, and chopped chives. Serve alongside fresh kale leaves.
